Caribbean Cuisine

There is nothing that Chef Ravi loves more than to take your taste buds and make them your playground. His signature Caribbean dishes do just that as they represent the plentiful bounty of the islands' lush tropical vegetation, combined with the diverse groups of people that have lived there. Many cultures from around the globe have contributed a profound influence on the food and traditions found on the islands. Food plays a central role in family life and traditions in the islands. Cooks spend days preparing menu offerings for holidays, festivals and special family gatherings.

Savory Turkey with Roasted Vegetables

When fire-roasting veggies, gone is the bitter flavor of raw green and yellow onions and in its place is a smoky, caramelized, sweet mound of tender vegetables, including four different types of sweet peppers and sun dried tomatoes. Half is blended into a sauce to ladle into the garlic and onion turkey while it cooks. The rest is served atop the meat for a dish full of texture and taste.

Caribbean Style Vegetable Chicken

Ever hear of the herb shado beni? It is commonly used in the cuisine of the West Indies, yet difficult to find here in the US. It can be compared to cilantro, but Chef Ravi will take no substitute when creating his Caribbean herb chicken. Its pungently fresh flavor is complimented in the marinade and sauce with citrus juices, roasted garlic, torched habanero skins and a dash of oregano and thyme.

Caribbean Stew

A fusion of peppers including habanero skins, cascabel and pasilla-ancho chili pods slowly simmer together with the Caribbean herb shado beni and big leaf thyme in a citrus liquid. Do not be afraid of the heat, Chef Ravi carefully uses only the torched skins of the peppers to provide a sweet compliment to the pungent shado beni and orange tang allowing these big flavors to stew into the chicken breasts as it cooks and melds into one Caribbean home-town comfort meal.

Citrus Spiced Ginger Chicken

Chef Ravi begins this recipe by torching off the thick skin of ginger root and then continues to char the exposed root. He then adds the ginger and sweet roasted garlic to an herb mixture of shado beni, big leaf thyme, and a hint of cumin. He tops the blender with citrus juices of lemons and tangerines, and Santa Nella wine. The chicken then marinades overnight in this flavored medley and is topped with fresh cilantro to ensure every piece is bursting with a bright and tangy sweet bite.
